Winter; time for pruning
 
We prune our vines using the vertical Shoot Positioning (VSP) method to control yield and to maximise the amount of sunlight and fresh air available to the leaves during the growing and ripening season.
 
Sunlight is needed by the leaves for photosynthesis - to make the sugars that will eventually become the alcohol in the finished wine. Fresh air is needed to keep the humidity levels down, and thus reduce the probability of mildew infection by preventing the fungal spores from developing.
